So you didn’t ask, but these peanut butter cookies recipe was missing in my portfolio. If you follow me on Instagram you will see a peanut-butter-banana trend in my latest pictures, and that is mainly because I am absolutely obsessed with peanut butter. For real. I even make my own when I forget to bring a jar from the supermarket.
I thought that making delicious peanut butter cookies would be extremely difficult and would involve complicated measurements and what not. Oh, how wrong was I!
These are extremely quick to make and even quicker to get demolished. I confess that my excitement lead to a small burn on the roof of my mouth [sorry, not sorry].
Makes 12 chunky cookies
- 3 tbsp peanut butter [I have tried an infinite number of brands, and this is my favourite]
- 30 grams unsalted butter, melted
- 3 tbsp light brown sugar
- 1/2 cup plain flour
- 1/4 tsp baking powder
- a drop of vanilla extract
Pre-heat the oven to 170oC (338oF/gas mark 4) and line a rectangular tray with baking paper.
Mix the peanut butter and melted butter until smooth. Add the vanilla extract.
Sieve the flour and add it to the peanut butter mixture, along with the baking powder and sugar.
The final dough is kneadable, not crumbly or oily. Make small balls of dough and display them in the tray. With a fork press the dough to achieve a 4×4 patter [like in the picture].
Make sure each cookie has the same height so they cook uniformly.
Pop in the oven for 20 minutes and put the kettle on.
