We have been trying to incorporate more vegetarian dishes at home, and we have recently discovered [yes, I am a bit late to the party] this amazing Quorn pieces. They literally taste like chicken! These pieces are so versatile and able to incorporate so many flavours. No one should dare say vegetarian food is boring!
Because I am into trying new recipes I thought of doing an exotic twist with these pieces by introducing mango chutney. Well, let me tell you that I had never tried mango chutney and it is freaking delish! I mean if you like sweet-salty-spicy food.
This recipe is perfect for those evening when you get home late and just want a fuzz free comfy bite. Be careful with the red chillies though, unlike me not everyone likes to be sweating their asses off just for that spicy taste.
Serves 5 people
- 2 x Quorn pieces 300g
- 1 small chilli pepper
- 5 tsp mango chutney
- 1 tbsp coconut oil
- 1 medium white onion
- 3 tsp tomato pureé
- 1 cup cashews
- salt & pepper
In a large pan or casserole, on a medium high heat, add the coconut oil, chilli pepper and onion. Let it sizzle until the onion is soft and slightly golden.
In blender add the cashews and blitz them. When they start forming a crumbly paste add water until the mixture resembles cream. Season with salt and pepper.
Lower the heat and add this cream to the onion and chilli, along with the tomato pureé and cook for 2 minutes.
Add the pieces and cook for 15 minutes with the lid on.
Serve with basmati rice and top with some fresh parsley.
It is best served in a bowl and eaten while snuggling up a soft blanket in the sofa.
