I love crunchy homemade granola, I really do! Either in my yogurt, topped up with some berries, or with a cold bowl of milk. Or sometimes even plain. While watching Netflix. Wrapped in a blanket.
A while ago I came out with this super quick and easy homemade granola recipe that turns out to be delicious and healthy. I know, double win!
It only requires 3 dry ingredients, a sweet base and an oily base. Et voilà! You won’t find raisins or any other dried fruits, this is essentially a nuts and seeds kind of thing. Oh yes, give me all the crunchiness!
Also, I am quite proud of myself because I have used coconut oil despite my childhood aversion to coconut. So I guess this is a great way to dismiss a flavoured oil into a recipe. Don’t try to add broccoli and feed it to your kids though.
Ingredients
- 2 cups rolled oats
- ½ cup walnuts
- ½ cup mix seed (sesame, flax and sunflower seeds)
- 3 tablespoons virgin coconut oil
- 4 tablespoons of organic honey
Method
Pre-heat the oven to 150oC/fan (300oF) and line a tray with baking paper.
Mix all the ingredients in a glass bowl and pour them onto the baking tray, spreading evenly
Bake for 30 minutes until golden brown and let it cool before popping into a sealable jar.
